Is it a pie? Is it a cobbler? All I know is that it was pretty tasty!
This is the first time I have made Blackberry Cobbler and I knew that I wanted it to have a pie crust instead of the biscuity topping that is normally on a cobbler. This is what I ended up with.
You can use whatever pie crust you like. You can even use frozen pie crust. I wanted to make my own so I googled and found a recipe that I could make in my food processor and one that used all butter since I didn’t have any shortening. This is the one I used and it was excellent and very easy to make, Perfect Pie Crust. I knew that I wanted to be able to put it in a 9”x13” pan so I decided to 1.5x the recipe and I ended up having enough of the crust and berries to make the big pan and then a pie sized one as well.
- Crust of your choice (uncooked)
- Fresh Blackberries, I ended up with about 8 cups of really big berries
- Sugar (use your taste to determine how sweet you need them, I used about 1.5 cups of sugar for my 8 cups, but it will depend on how many berries you have and how sweet they are)
- lemon juice (I used about 1.5 Tbsp)
- flour (again, use your judgment based on how many berries, I used about 3 Tbsp)
- cinnamon (just use a little, I used about 1 tsp for mine)
- butter
- egg wash (1 egg yolk + 1 Tbsp milk)
Pre-heat your oven to 375*.
Prepare your crust and line your pan with the bottom crust, I take a fork and prick the bottom a bit.
Rinse your berries thoroughly, the berries I bought were really big ones!
In a big bowl combine your berries, sugar, flour, lemon juice and cinnamon. Once you have it all combined pour it in the prepared crust and top with butter, here you can use as much or little as you like.
Roll out and place the top crust on the berries. I didn’t want to seal my edges because I like to see the blackberry “stuff” around the edges so I just cut it so that it fit right down on top of the berries. As it cooks the crust will shrink back some so if you have extra around the top that it just fine. Cut slits in the top of the crust for the steam to excape and bush all over with the egg wash. This will give it that pretty brown crust.
Put it into your pre-heated oven and let it cook about 40-45 minutes. Keep a watch on it after about 35 minutes or so, you will be able to tell when it’s done when they crust is all browned and looks flaky.
Let it cool a bit and enjoy! It tastes particularly good with vanilla ice cream!!
